I promised I would share any paleo-friendly recipes once I found one that was worth posting, and boy do I have a good one for you! I’m a bit of a grump in the morning, and I really can’t be bothered to make a cooked breakfast every day, and I don’t like to eat eggs or protein at breakfast because I need to keep the protein low with my kidney disease. I’ve really been missing my morning muesli. It’s not easy to find an oat-free, grain-free muesli in the shop, so I thought I’d make my own. You’ll be really surprised at how easy it is!
You pretty much just have to raid the cupboard of whatever nuts, seeds and fruit you have on hand, then spice it up as you like! It’s really that easy. I’ve decided to dry mine overnight in the oven with just the pilot light on, but it’s especially good made fresh.
Grain-free muesli
Ingredients
- 1 peeled and cored apple
- a handful of almonds
- a handful of walnuts
- a handful of sunflower seeds
- a handful of chia seeds
- a handful of flax seeds
- a handful of dessicated coconut
- a handful of dried cranberries
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
Method
- Throw everything into the Thermomix (or food processor)
- Pulse 3 or 4 times (turbo) until you get the desired consistency
- Enjoy!
Variations
You can make a different muesli every time if you vary the seeds, nuts, fruit and/or spices. Here are a couple of spice options:
- Pumpkin-pie: 1 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp allspice
- Chocolate-orange: orange rind and cacao nibs (I think some toasted hazelnuts would be amazing in this)
- Chai: 1 tps cinnamon, 1/2 tsp cardamom, 1/8 tsp ground cloves, 1/4 tsp ginger
- Vanilla: Add the seeds of one vanilla pod (or 1/2 tsp vanilla extract)
