These quinoa bites are the perfect size for a toddler’s little fingers and you can really just throw in any vegetables you happen to have leftover. I’ve made this a recipe for the Thermomix, but you can easily make this without a Thermomix if you chop up the veggies in a food processor, or even just grate them.
Ingredients:
120 g quinoa
1 carrot
1/4 zucchini
2 small green onions
1 T parsley
1 T basil
1/4 c. frozen peas
1/4 c. frozen corn (optional)
40 g parmesan cheese
3 T plain flour
2 eggs
Method
Fill the Thermomix with water and insert the basket. Tare the scale and measure 120g of quinoa (3/4 c). Set the temperature to Varoma and speed 4 for 15 minutes (or until the grains start spiralling out). Once cooked, rinse under cold water.
Put the roughly chopped carrot, zucchini, green onions, parsley, basil and parmesan cheese in the bowl. Set to ‘closed lid’ and press turbo for 3-4 seconds.
Mix together the chopped veggies, frozen veggies, quinoa, eggs and flour.
Pour into a greased mini cupcake tin (or drop onto a baking sheet) and bake at 180 C for 15-20 minutes.
